Oven Soup


1-1/2 lbs. hamburger
1 onion, sliced thinly
2 or 3 cloves of garlic
8 oz. block cream cheese
1 package Hidden Valley Ranch dressing mix
1 can Ro-Tel or Hatch tomatoes and green chiles
1 can green beans


Brown hamburger with onion and garlic.  Drain, if necessary, and put it deep casserole dish or pyrex bowls.  Cut cream cheese into chunks and stir into hot hamburger until melted.  Add dressing mix, tomatoes and green beans (I don’t drain mine.)  Mix all together.  Cover bowl with foil and place in 350 degree oven for at least 30 minutes.  This is a very forgiving recipe so it can sit in the oven for 45 minutes to an hour with no problem.  Serve, topped with cheddar cheese and sour cream, if desired.

If you are Dirty Keto, or not Keto at all, you could dd some potato to this.  I would cook it in with the hamburger, or boil it separately.

Kickin’ Chicken

Cook in CrockPot 6-8 hours or Instant Pot for 30 minutes:
2 lbs. boneless, skinless chicken breast (about 3)
1 package Hidden Valley Ranch dressing mix
1 bouillon cube
1cup water

Stir in:
1 cup Herdez roasted salsa verde
1 - 8 oz. package cream cheese, cut into cubes
1 can Hatch diced roasted tomatoes and green chilies with garlic
1/2 cup Monterey Jack cheese

Heat thru’.  This has a nice little kick to it.  Quick and easy!

Pure Indulgence Peanut Butter Biscuits

Ingredients:
• 1 cup almond flour.
• 1⁄2 cup unsweetened peanut butter (I used Smuckers)
• 1/3 cup erythritol (I used Swerve)
• 1 tbsp coconut oil.
• 3⁄4 tsp baking powder.
• 1⁄2 tsp vanilla extract

Instructions:
• Preheat oven at 350 degrees.
• In a large bowl, mix all of the
ingredients together until a
dough is formed.
• Divide the dough into 8 balls and flatten into a round patty.
• Line a baking tray with parchment paper.
• Bake for 10-12 minutes or until

golden brown.

This recipe comes from Australia, where they call cookies "biscuits".  These are just some really good, easy peanut butter cookies.
